Rajasthani Kadhi Recipe: Ingredients 

Sour curd – 1 cup
Gram flour – 1/4 cup
Rai – 1 tsp
Red chilli powder – 1 tsp
Ginger paste – 1 tsp
Fenugreek seeds – 1/2 tsp
Asafoetida – 1/4 tsp
Dry red chilli – 2
Turmeric – 1/2 tsp
Finely chopped green chilli – 1
Green coriander – for garnishing
Desi Ghee
Salt – as per taste

Method

To make Rajasthani Kadhi, first put sour curd in a big vessel.
Now add gram flour to it, churn it well with the help of a churner, and add some water to it.
Now add chilli powder, turmeric and salt as per taste to this solution.
Now take a large pan and heat it on medium flame.
When the curry becomes hot, add ghee to it and then fry it by adding mustard seeds, fenugreek seeds, dry red chillies and asafoetida.
Now add finely chopped green chillies and ginger paste and mix.
When all these spices are cooked well, then put curd-gram flour solution in it.
Now keep stirring it continuously with the help of a ladle till it comes to a boil.
After this, cook the curry for 15 to 20 minutes.
Now garnish it with coriander leaves.
Your curry is floating, if you want, you can also add pakoras to increase the test. But it depends on your wish.
