Vegan Soya Curry | Cooking with Aunty D

 

In need of vegan recipes? Look no further! This Vegan Soya Curry can be paired with a bowl of steamed white rice or some crispy bread and makes for a tasty, filling meal!

 

 

Ingredients:

Soy (any kind) 1 packet

Onion 1 medium

Capsicum 1 large

Ginger + Garlic 1 tbsp

Chilli Powder 1 tsp

Turmeric Powder  1/4 tsp

Curry Powder  1/2 tsp

Pepper  1/4 tsp

Tomato  1 large

Salt  1 tsp

Milk (coconut)  1 1/2 cups

Oil 1 tbsp

Fenugreek 1/4 tsp

Curry leaves

Kalu Kudu 1/2 tsp

 

Method:

  1. Add boiling water to Soy and keep for 5 minutes. Drain afterwards.
  2. Heat oil and add onion, curry leaves, fenugreek, capsicum, ginger and garlic, turmeric, chilli powder, pepper, curry powder and tomato. Mix well and add coconut milk.
  3. Add soy and salt. Cook 3-5 minutes.
