Pani Pol Pancakes | Cooking with Aunty D

 

These crunchy pancakes are great if you want a quick snack and are sure to satisfy your sweet tooth! Make them yourselves with this quick and easy recipe!

 

Ingredients :

Sera Coconut Oil

All-purpose flour  2 cups

Coconut  1 1/2 cups

Treacle (Coconut or Kithul) 1/2 cups

Egg  1

Sugar (brown or white)  2/3 cups

Water 2 1/2 cups + 1/4 cup

Salt  1/2 tsp + 1/3 tsp

Vanilla 1 tsp

Food colouring of your choice

 

Method:

  1. Add salt, egg, vanilla and water to the flour and mix well.
  2. Place a pan in the cooker and add scraped coconut, Treacle, sugar, water and salt. Cook in a medium to low flame and make the pani pol.
  3. Apply Sera Coconut Oil to the pan and heat it. Make pancakes and place pani pol in the middle, roll it up and enjoy!
