Cauliflower Masala

Bold in flavour and easy to whip up, here’s how to make spicy cauliflower masala!


• Cauliflower 500g
• Oil 1 tbsp
• Onion 1 medium
• Mustard seeds ¼ tsp
• Curry leaves/rampa
• Tomato puree 2 tbsp
• Grated coconut ¼ cup
• Green chilies 2
• Garlic 3 cloves
• Water ½ cup
• Chili powder ½ tsp
• Curry powder ¼ tsp
• Ginger ¼ inch
• Salt ½ tsp
• Turmeric 1/8 tsp

Method:

1. Heat oil in a pan and add onion, mustard seeds, curry leaves/rampa, and fry until golden brown.
2. Add salt, turmeric, and then the tomato puree. Grind coconut with green chilies, ginger, and garlic. Add this paste to the pan, add half a ½ cup of water, chili powder, and curry powder. Mix this well.
3. Then add cauliflower and cook for 5 minutes.
